Recipe: Quesadillas

Warm the flour tortillas for about 30 seconds a side to make them pliable.Spread filling on one half of the tortilla, leaving at least half an inch space along the edge.Fold the tortilla over and press gently to "seal".Brush one side of the tortillas with vegetable oil.Sprinkle some kosher salt on the oiled tortillas.Put the tortillas in the skillet, oiled-side down. Oil and salt the other side.Flip over once the first side starts to brown.Allow the quesadillas to cool for about a minute before cutting into wedges and serving.
